Homemade Breakfast Sandwiches

I hope you're not making a frequent habit of going to a fast food restaurant for breakfast sandwiches... SO bad for your health.  At least when you make them at home you know exactly what is in them.  These are simple and delicious and take about 20 minutes to prepare.

INGREDIENTS:

  • Canned biscuits (I used Grands flaky, makes 8 large sandwiches)
  • Eggs
  • Cheese (optional)
  • Bacon (I used freeze-dried)
DIRECTIONS:


  • Bake the biscuits for 17 minutes
  • Scramble the eggs while the biscuits are baking. I added a little bit of cheese and milk.
  • Microwave the bacon for 45 seconds, longer if you like crispy bacon.
  • Split biscuits in half when still pretty warm
  • Fill with eggs and one piece of bacon (halved).
  • Makes 8 servings.  Store in the frig for the next day if you'd like.

Aldi Product Review: Fresh Spinach + Recipe : Greek Spinach Feta Eggs Wrap

I'm always trying to get a little "green" in each meal when I can.  I occasionally have breakfast at First Watch and one of my favorite items there is the Greek Fetish omelet.  The other day I attempted something similar at home.

My son asked for some scrambled eggs for breakfast.  I decided to throw in a couple of handfuls of fresh spinach (from Aldi--$1.99 per bag) and some feta cheese.






Sauté in a little bit of olive oil and voila!  In about 5 minutes you have a delicious egg dish.


You can also make it into a burrito.

Put the tortilla on TOP of the egg mixture.


Flip the plate over and there you go.



This  was big enough for two of us to eat for breakfast.  The spinach gave it a lot of texture, has very FEW calories and was very tasty.

Add a few greens to your next breakfast dish.

What Breakfast Cereals do You Serve Your Family?

I eat cereal many days of the week for breakfast. Not just because it's easy but I just love the taste of certain ones.  My husband's favorite is Shredded Wheat (he used to eat Raisin Bran until I told him how much sugar is in it); my favorites are Cheerios and/or Grapenuts.    Those are about the only cold cereals we keep in the house.   Great Grains, every now and then for variety but that has a fair amount of sugar in it also.  I've never purchased anything like Cap'n Crunch, Cocoa Puffs or Trix but you'll occasionally find PopTarts in the pantry.  I'm not THAT particular.  :)


In warmer weather I like to cook oatmeal with raisins and/or apples.  The more whole grains the better, if you're going to eat cereal at all.   My family also enjoys scrambled eggs with peppers, onions and turkey sausage/bacon occasionally.  Some days I just have a fresh smoothie made with my VitaMix  On Sundays I often bake cinnamon rolls for a sweet treat.    Whatever works for your family, but try to buy/serve on the healthier side of the spectrum if possible.  Be sure to check out coupon policies such as the Walmart Coupon Policy before purchasing cereals.  You may think you have a great deal and it actually is not when you arrive at the checkout register.

Here is my favorite summer cereal with a handful of almonds and fresh blueberries and a cup of hot tea or coffee.  Mmm...

What's For Breakfast? Morning Meal Food Ideas

What do you generally eat for breakfast at your house? or do you just skip it?  Since I have two sons I have generally made breakfast in the mornings for them.  My husband used to like this but now, since he's lost weight, he only wants shredded wheat with nuts and fruit Monday through Friday.  This makes it easy for me as far as he's concerned.   I just need to make sure the pantry is always stocked with shredded wheat.   I buy several boxes of it when it's on sale ($2.00 or less). Have you noticed the price of cereal lately?!

My older son is at college, so  unless he's spent the night here at home, he makes his own breakfast. My younger son only wants breakfast 2-3 days during the school week but always on mornings when he has tests.  (Trying to get him to eat EVERY morning...).  Here are breakfast foods that he can choose from  that I could make at any time (* are his faves):

  • Cereal with fruit and nuts
  • Oatmeal
  • Scrambled eggs and  cheese*
  • Breakfast  sandwich (eggs, bacon, cheese on an English muffin)*
  • Breakfast burrito (just like the sandwich but on a tortilla)
  • Bacon 
  • Fruit--apples, blueberries, cantaloupe, bananas
  • Fresh fruit smoothie
  • Hash browns*  
  • French toast
  • Pancakes* or waffles
  • Blueberry muffins
  • Cinnamon rolls
  • Yogurt
There's actually quite a large selection just with what I keep on hand or in the pantry or freezer.   I've never made an actual list of what I have here to eat for breakfast...there's more than I thought.  Feeding a family doesn't have to be hard and for me, it helps to be somewhat organized about it. 

What's my favorite?  Plain Cheerios (NOT a store brand) with fruit and nuts.  :)  What's yours?
