Kale comes in such large packages. I don't really like it as well raw as cooked and I had a LOT to use up. Found this recipe for kale soup online from a new-to-me site called Love and Lemons. Absolutely delicious!
I always made a few changes to a recipe I find online..
I added chopped zucchini for more fiber and veggies + 2 more cups of water.
I used cannoli and garbanzo beans as the "white beans".
Make a pot today for lunch to have on hand for a few days with your lunch or dinner. The whole family will enjoy it.
