One of my main "rules" in maintaining / losing weight is to try to eat a large healthy salad each day for lunch. Really... almost every day.
Making these salads once a week (especially in the summer), I can grab healthy fast food each day of the week. Just remember: wet items (tomatoes, peppers, onions, fruit) go on the bottom, greens on top. You can also put in the nuts, seeds and other dry items on top of the greens. I usually add those separately after I put the salad on my plate. I don't generally use salad dressing, but if you do, put it FIRST on the bottom.
